size=3>The basic concepts of optical cooling of atoms and molecules<BR>are
introduced, the experimental state of the art is reviewed,<BR>and the open
issues are discussed. In the outlook, I will discuss<BR>laser cooling as a
realization of quantum reservoir engineering,<BR>and discuss analogous concepts
applied to quantum state<BR>preparation of the electromagnetic field in
resonators.</FONT></P>
