"ESI-MS and MALDI-MS Fingerprinting:
Classification, Adulteration and Aging of Food,
Cosmetics and Medicinal Products "
Abstract:
With the advent of the very soft ESI and MALDI
techniques, mass spectrometry is now able to
provide, for mixture analysis, nearly a single
ion for each (semi)polar analyte. This ‘one ion:
one component’ matching in addition to the high
speed, sensitivity and selectivity that only MS
can offer makes ESI-MS and MALDI-MS very powerful
techniques for the typification of chemical
mixtures of different compositions based on
natutal chemotaxomonic markers. MALDI-MS peptide
mass fingerprintings for protein analysis in
proteomics and direct infusion ESI-MS
fingerprintings of crude oils in petroleomics
have already been used widely for reliable
characterization. But this successful approach
could also be extended to many other areas. In
this talk, we will show examples of the use of
MALDI-MS and direct infusion ESI-MS
fingerprintings for the classification,
adulteration and aging of honey, propolis, plant
extracts, fruit juices, natural versus transgenic
beans, whisky, wine, beer, brazilian cachaça
(versus rum), phyto-therapeutic products, coffee,
snake venoms, perfumes, vegetable oils, cosmetic
oils, olive oil, chocolates, gasoline, biodiesel,
and meats in general. The use of a technique
recently developed in our laboratory, that is
desorption sonic spray ionization (DeSSI), for
‘chromatography-free’, ‘sample preparation-free’
and ‘high voltage-free’ ambient mass spectrometry
fingerprintings will also be illustrated.
